Name: Quick Apricot Chutney
Yield: Serves 4 (Makes about 1 cup)
Ingredients: 1 medium, jalapeño chile, stemmed and chopped coarse; 1 large, shallot, chopped coarse; 1 (1-inch) piece, fresh ginger, cut crosswise into 4 coins; 2 , whole cloves; 1/2 cup, water; 1/2 teaspoon, table salt; 1/4 cup, light or dark brown sugar, packed; 1/3 cup, cider vinegar; 8 ounces, dried apricots (about 1 1/4 cups)
