Gluten-Free Peanut Butter Sandwich Cookies
Why This Recipe Works
These easy-to-make sandwich cookies feature crunchy cookies and a smooth filling, both packed with big peanut butter flavor. Since our traditional recipe uses very little flour, developing a gluten-free version was simple. We started by just swapping in our all-purpose gluten-free flour blend for the flour. The cookies turned out pretty close to the original, but tasted a bit gritty and spread out too thin as they baked. Resting the batter helped the cookies taste less gritty, and adding xanthan gum reined in the spreading. Satisfied with the cookies’ texture, we focused on flavor. To boost the peanut flavor, we added chopped peanuts to the dough. As for the filling, we found that it was hard to spread over the cookies without breaking them. Softening the peanut butter and butter briefly in the microwave before assembling the sandwich cookies solved this problem easily. To make the filling a bit more sweet and help it stay in place once the cookies were assembled, we added some confectioners’ sugar.
